A refreshing lunch for hot days

It’s ridiculously hot here in Vienna at the moment, so I was longing for something fresh and simple but still has some substance to it (I’ve been working out a lot recently and I’m basically constantly hungry + I love love love pasta!). This pasta salad is just that: Watermelon and mint are super refreshing, the slight sweetness of the watermelon contrasts the sourness of lime and feta, rocket adds a nice slightly bitter twang and bell peppers add a great crunch. You see, it’s a great combination!

Crispy, tender, healthy and easy to prepare

A friend recently drew my attention to the fact that there are not a lot of meat dishes on the blog so far (the specific wording was “Where is the meat?”), so I figured it was time to change that. And voilร , there you have a beautiful tender chicken breast, filled with mediteranean flavors and crispy bacon. Add soft on the inside and crispy on the outside oven-roasted thyme potatoes and buttered spinach and you have a balanced and delicious meal. Also, it’s a really simple recipe, so I don’t think it’s possible to mess it up. Having said that, theย afore statementย is NOT intended as a challenge to prove me wrong ๐Ÿ˜›
Typically, I would make this dish for lunch on a Saturday for my sister or a friend or for the whole family (just double the amounts).

I think general wisdom is that anything wrapped in bacon is awesome and I have to agree, bacon is petty rad. However, in this case the bacon has a practical function as well: keep the filling where it belongs, which is in the chicken breast. I really love filled chicken breast and I’ve tried a lot of different variations, but keeping the filling from falling out when turning to the other side while frying was always a challenge. Creamy, zingy &ย awesome

This is so flavorful, you will like it, trust me! I’m a fan of making pesto myself, because it’s so simple and so much tastier than the store-bought versions. Usually, it doesn’t take much longer to make homemade pesto. This one is an exception, because you have to roast the peppers first, which takes time of course.

This pesto has a lovely creamy consistency and the slight bitterness from the rocket really makes the dish a bit lighter. I used pointed peppers, but bell peppers are fine as well. Also, if you don’t feel like roasting the peppers yourself you could use the store-bought ones. In that case, you can skip right to step 4. So let’s get started! Continue reading
