These dumplings are so delicate in flavor and soft in texture, it’s fantastic. They are the perfect incorporation of spring flavors for me. There is this hint of fresh lemon, basil and fragrant ramson. Brown butter and parmesan add just the right amount of warmth, comfort and substance. Last but not least, I boiled some cherry tomatoes to contrast ramson and spinach, which works very well :).

Warming orient-spiced fall stew with lots of veggies

When fall hits it’s stew time for me, so I’ve been making lots of different ones lately because they are also perfect to take to the office as lunch the next day (or five, in my case 😉 ).

This is a boldly spiced orient-inspired vegetarian lentil stew, which is sweet because of raisins and pomegranate, spicy due to chili and has all these great spices that will warm you up from the inside. Also, there are lots of veggies inside and it’s quick and easy to prepare – perfect when you come home at night, don’t feel like doing anything too fancy yet healthy.

Also, this is a great healthy dish to make if you are on a budget (maybe just leave out the pomegranate seeds).

You can eat this stew without any side dishes, since lentils are very nourishing. However, I like it best with some couscous or bulgur.

Quick, easy, healthy, delicious, full stop. 

This is another great recipe for all of you looking for a quick fix when you come home after work and just want something easy but healthy for dinner as this dish provides you with plenty of lean protein and a solid amount of vegetables. Best thing: suuuuper easy to make, you really can’t go wrong with it + it’s really delicious! The veggies and thyme give the whole dish a Mediterranean feeling, and that a hint of white wine just adds a little something to it.

Generally speaking, you could also use other kinds of vegetables, which make this dish perfect if you have leftover veggies you need to use up. Also, if you can’t get sea bass filets, don’t worry, any firm-fleshed fish is fine.

Oozing chicken & bacon quesadilla with sour cream, guacamole and tomato salsa

Crispy creamy deliciousness

I came up with this recipe when I came home after a workout and was just looking for something nice, balanced and easy, and had some tortillas left to use. I ended up liking the quesadilla so much that I made another one the day after and finally decided to also share it with you 🙂

In this case, the bacon really adds a little something to the whole dish and works perfectly with cheese, green peppers and chicken. Top it with sour cream and you’re close to food heaven. I really think you can never go wrong with creamy guacamole and the tomato salsa just adds lightness to the whole dish.

As I said, this is quite balanced, you have lots of proteins from chicken and cheese, good fatty acids from guacamole and the plenty of veggies in the quesadilla, salsa and guacamole. Also, I used a whole wheat tortilla to make the whole dish even more wholesome. If you want to step it up further, serve with salad on the side.

Guys, I’m super psyched about this recipe! It’s been on my mind for quite a while but I never managed to try it out until this week for a date night. To be honest, it’s even better than I had imagined. The marinated sake sashimi is amazing by itself, but combine it with crunchy veggies, creamy avocado and this incredible fruity mango dressing and it will lead you right into food heaven! The mango dressing is so delicious that I ended up eating some of it without anything else because it’s so delicious 🙂 Needless to say, this is super healthy too, as you have your lean protein and ton of veggies. Perfect for a light lunch or dinner (may want to make a bit more in this case) or (as I did) serve as a starter.

There is not much that could possible go wrong here, just make sure you have enough time to marinate the salmon properly (i.e. at least 1.5 hours in the fridge).

Sweet mango chicken, crunchy veggies, creamy avocado and a hint of spice

I’ve been thinking a bit more about light & healthy summer dinner options, and this is one more dish I came up with. It’s brilliant, because you have fresh, zingy avocado cream, sweet and spicy mango, crispy chicken and crunchy veggies. Also, it’s a really healthy and delicious thing to make and will surly jazz up your day. I really love mixing sweet and savory flavors so this is a total win on my books. Just make sure to use ripe and soft mangoes. This is really important, because underripe mangoes are not sweet and juicy enough and therefore won’t give you this amazing thick sauce when frying.

Once again this is a healthy and pretty straight forward dish to make, so let’s do it!
