Springtime ramson, spinach & curd cheese dumplings

ramson-spinach-curd cheese dumplings-1-6

Light, fresh & delicate spring dumplings

These dumplings are so delicate in flavor and soft in texture, it’s fantastic. They are the perfect incorporation of spring flavors for me.ย There is this hint of fresh lemon, basil and fragrant ramson. Brown butter and parmesan add just the right amount of warmth, comfort and substance. Last but not least, I boiled some cherry tomatoes to contrast ramson and spinach, which works very well :).

Fragrant fish in a bag on Mediterranean veggies with white wine & thyme

fragrant fish in a bag mediterranean veggie bed white wine

Quick, easy, healthy, delicious, full stop.ย

This is another great recipe for all of you looking for a quick fix when you come home after work and just want something easy but healthy for dinner as this dish provides you with plenty of lean protein and a solid amount of vegetables. Best thing: suuuuper easy to make, you really can’t go wrong with it + it’s really delicious! The veggies and thyme give the whole dish a Mediterranean feeling, and that a hint of white wine just adds a little something to it.

Generally speaking, you could also use other kinds of vegetables, which make this dish perfect if you have leftover veggies you need to use up. Also, if you can’t get sea bass filets, don’t worry, any firm-fleshed fish is fine.

So let’s do it! Trust me, it’s gonna good! ๐Ÿ™‚

Incredible sake sashimi salad with sesame, avocado and mango dressing

Sake sashimi salad avocado mango dressing

Incredibly fragrant, healthy and amazing

Guys, I’m super psyched about this recipe! It’s been on my mind for quite a while but I never managed to try it out until this week for a date night. To be honest, it’s even better than I had imagined. The marinated sake sashimi is amazing by itself, but combine it with crunchy veggies, creamy avocado and this incredible fruity mango dressing and it will lead you right into food heaven! The mango dressing is so delicious that I ended up eating some of it without anything else because it’s so delicious ๐Ÿ™‚ Needless to say, this is super healthy too, as you have your lean protein and ton of veggies. Perfect for a light lunch or dinner (may want to make a bit more in this case) or (as I did) serve as a starter.

There is not much that could possible go wrong here, just make sure you have enough time to marinate the salmon properly (i.e. at least 1.5 hours in the fridge).

Ok, I’m so excited about this recipe, I just want to get started! ๐Ÿ™‚

Quick & easy pesto salmon with asparagus, oven tomatoes and potatoes

pesto salmon 1

A healthy summer meal that tastes delicious and will make you feel great

Summer (= bikini season) is coming so I’ve been thinking about some light and healthy dinner options that don’t take much time, taste delicious and make you (and me) feel great! I love eating things that are good for me, but it also has to be a treat for your taste buds ย (it turns out that I get somewhat passive-agressive when I have to endure longer periods of non-so-nice tasting foodโ€ฆ). Long story short, I came up with this delicious baked pesto salmon, it’s good for you and you should try it! ๐Ÿ™‚

I used some of my 5-minute ramson pesto, because I had some left, but any green pesto (basil, rocket etc.) works just fine.

The great thing is that you don’t need much kitchen ware, just place everything in an ovenproof dish and voilร . This is also a perfect one-person dinner, because it’s so easy to make. One word of caution though: make sure you take the salmon out of the oven after 15 minutes, it will be delicious and juicy. However, after 15 minutes it will start to dry out, so in this case less is definitely more!

If you are in a hurry there are a few items where you can save time: first of all, I usually make pesto myself, but if you don’t have time you could use store bought pesto instead. Secondly, I like to marinate the fish with the pesto for a while so the flavors go into the fish better, but you can also skip that step if you need to. Continue reading

Feta & dried tomato filled chicken breast in bacon wrap

Bacon wrapped filled chicken breast (1 von 1)-6

Crispy, tender, healthy and easy to prepare

A friend recently drew my attention to the fact that there are not a lot of meat dishes on the blog so far (the specific wording was “Where is the meat?”), so I figured it was time to change that. And voilร , there you have a beautiful tender chicken breast, filled with mediteranean flavors and crispy bacon. Add soft on the inside and crispy on the outside oven-roasted thyme potatoes and buttered spinach and you have a balanced and delicious meal. Also, it’s a really simple recipe, so I don’t think it’s possible to mess it up. Having said that, theย afore statementย is NOT intended as a challenge to prove me wrong ๐Ÿ˜›
Typically, I would make this dish for lunch on a Saturday for my sister or a friend or for the whole family (just double the amounts).

I think general wisdom is that anything wrapped in bacon is awesome and I have to agree, bacon is petty rad. However, in this case the bacon has a practical function as well: keep the filling where it belongs, which is in the chicken breast. I really love filled chicken breast and I’ve tried a lot of different variations, but keeping the filling from falling out when turning to the other side while frying was always a challenge. But fear no more, bacon is the solution! ๐Ÿ™‚ Continue reading
