Oozing chicken & bacon quesadilla with sour cream, guacamole and tomato salsa

Crispy creamy deliciousness

I came up with this recipe when I came home after a workout and was just looking for something nice, balancedย and easy, and had some tortillas left to use. I ended up liking the quesadilla so much that I made another one the day after and finally decided to also share it with you ๐Ÿ™‚

In this case, the bacon really adds a little something to the whole dish and works perfectly with cheese, green peppers and chicken. Top it with sour cream and you’re close to food heaven. I really think you can never go wrong with creamy guacamole and the tomato salsa just adds lightness to the whole dish.

As I said, this is quite balanced, you have lots of proteins from chicken and cheese, good fatty acids from guacamole and the plenty of veggies in the quesadilla, salsa and guacamole. Also, I used a whole wheat tortilla to make the whole dish even more wholesome. If you want to step it up further, serve with salad on the side.

Iโ€™ve been thinking a bit more about light & healthy summer dinner options, and this is one more dish I came up with. Itโ€™s brilliant, because you have fresh, zingy avocado cream, sweet and spicy mango, crispy chicken and crunchy veggies. Also, itโ€™s a really healthy and delicious thing to make and will surly jazz up your day. I really love mixing sweet and savory flavors so this is a total win on my books. Just make sure to use ripe and soft mangoes. This is really important, because underripe mangoes are not sweet and juicy enough and therefore won’t give you this amazing thick sauce when frying.

Once again this is a healthy and pretty straight forward dish to make, so let’s do it!

Crispy, tender, healthy and easy to prepare

A friend recently drew my attention to the fact that there are not a lot of meat dishes on the blog so far (the specific wording was “Where is the meat?”), so I figured it was time to change that. And voilร , there you have a beautiful tender chicken breast, filled with mediteranean flavors and crispy bacon. Add soft on the inside and crispy on the outside oven-roasted thyme potatoes and buttered spinach and you have a balanced and delicious meal. Also, it’s a really simple recipe, so I don’t think it’s possible to mess it up. Having said that, theย afore statementย is NOT intended as a challenge to prove me wrong ๐Ÿ˜›
Typically, I would make this dish for lunch on a Saturday for my sister or a friend or for the whole family (just double the amounts).

I think general wisdom is that anything wrapped in bacon is awesome and I have to agree, bacon is petty rad. However, in this case the bacon has a practical function as well: keep the filling where it belongs, which is in the chicken breast. I really love filled chicken breast and I’ve tried a lot of different variations, but keeping the filling from falling out when turning to the other side while frying was always a challenge.
