This recipe has been on my mind for quite a while now, but you know how it is, life’s busy and somehow I never managed to sit down and poor it into a new blog entry. So I’m happy to finally be publishing another post πŸ™‚

I really like this dish, because the flavors complement each other perfectly and the chutney is – alsoΒ as a stand-alone – brilliant. You have Indian-inspired curried fish, soft potato, and this warming sweet & spicy tomato chutney with a hint of coriander that aligns well with the curry flavor. First recipe in almost two months!!
I found a new and very cool flat mate (Pablo, he’s Spanish) recently and between moving stuff around, going to Ikea and a bit of a rough patch in terms of motivation and creativity time has been flying. Can you believe it’s Christmas in two months?? Crazy!!

Anyway, I’m back and after a burst of creativity (I mean it, I literally sat there around a week ago and suddenly around 10 recipe ideas hit me out of nowhere!! :D). So now I’m busy cooking and trying all these things) I’m incredibly excited about this recipe.

We all know the classic quiche Lorraine, but I wanted to give the whole idea of Lorraine a new spin. Quiche Lorraine is delicious, but not exactly healthy. Also, making pastry, blind baking etc. just takes FOREVER! This is why this recipe is great! You have a potato base, so no mixing stuff together, kneading, cooling, blind baking etc., which is also healthier and saves time. Also, I think it’s a really nice way of preparing fish (kids will love it!) aaaaaaand last but not least you have this amazing Lorrain flavor πŸ™‚ Hidden with the fish you’ll also discover this hint-of-lemon flavor that I find great.

Now, to call this dish outright healthy might be a bit of a stretch due to all the cheese in it. However, it features lean protein from eggs and fish, omega-3 fatty acidsΒ and good carbs (=potatoes).Β And while it is true that sour cream and cheese contain quite a bit ofΒ fat, they are alsoΒ high in protein and contain lots of calcium, vitamin D, potassium and magnesium. Last but not least, bacon just makes (almost) every dish more delicious πŸ˜‰
So if you are looking for a way to make this dish almost super healthy, I suggest to serve if with a nice veggie salad containing tomatoes, avocado, bell pepper etc. πŸ™‚

Quick, easy, healthy, delicious, full stop.Β 

This is another great recipe for all of you looking for a quick fix when you come home after work and just want something easy but healthy for dinner as this dish provides you with plenty of lean protein and a solid amount of vegetables. Best thing: suuuuper easy to make, you really can’t go wrong with it + it’s really delicious! The veggies and thyme give the whole dish a Mediterranean feeling, and that a hint of white wine just adds a little something to it.

Generally speaking, you could also use other kinds of vegetables, which make this dish perfect if you have leftover veggies you need to use up. Also, if you can’t get sea bass filets, don’t worry, any firm-fleshed fish is fine.

Incredibly fragrant, healthy and amazing

Guys, I’m super psyched about this recipe! It’s been on my mind for quite a while but I never managed to try it out until this week for a date night. To be honest, it’s even better than I had imagined. The marinated sake sashimi is amazing by itself, but combine it with crunchy veggies, creamy avocado and this incredible fruity mango dressing and it will lead you right into food heaven! The mango dressing is so delicious that I ended up eating some of it without anything else because it’s so delicious πŸ™‚ Needless to say, this is super healthy too, as you have your lean protein and ton of veggies. Perfect for a light lunch or dinner (may want to make a bit more in this case) or (as I did) serve as a starter.

There is not much that could possible go wrong here, just make sure you have enough time to marinate the salmon properly (i.e. at least 1.5 hours in the fridge).

Quick & easy pesto salmon with asparagus, oven tomatoes and potatoes

A healthy summer meal that tastes delicious and will make you feel great

Summer (= bikini season) is coming so I’ve been thinking about some light and healthy dinner options that don’t take much time, taste delicious and make you (and me) feel great! I love eating things that are good for me, but it also has to be a treat for your taste buds Β (it turns out that I get somewhat passive-agressive when I have to endure longer periods of non-so-nice tasting food…). Long story short, I came up with this delicious baked pesto salmon, it’s good for you and you should try it! πŸ™‚

I used some of my 5-minute ramson pesto, because I had some left, but any green pesto (basil, rocket etc.) works just fine.

The great thing is that you don’t need much kitchen ware, just place everything in an ovenproof dish and voilΓ . This is also a perfect one-person dinner, because it’s so easy to make. One word of caution though: make sure you take the salmon out of the oven after 15 minutes, it will be delicious and juicy. However, after 15 minutes it will start to dry out, so in this case less is definitely more!

If you are in a hurry there are a few items where you can save time: first of all, I usually make pesto myself, but if you don’t have time you could use store bought pesto instead. Secondly, I like to marinate the fish with the pesto for a while so the flavors go into the fish better, but you can also skip that step if you need to. Continue reading
