Quick Moroccan style chicken tagine with dried apricots & crunchy cashews

Moroccan chicken tagine

Quick, delicious & warming chicken tagine with exciting spices

This dish has it all: tender chicken (aka protein), subtle sweetness, a hint of lemon, a nice crunch and lots of vegetables. It’s delicious, warming and just a great & light supper for cold evenings. Personally, I love the complexity of this dish, because it has so many different components that come together and form one great dish.

Delicious & easy fall food as a starter to share or a 1-person dinner

I just love to make tarte flambée. I swear, I could make & eat it almost every single night, because it’s quick and easy to make and simply delicious.

It’s (almost) pizza, has an amazingly crispy bottom that only takes 3 minutes to prepare, you can top it with anything you like and baking time is 10 minutes, which makes it incredibly quick.

Aromatic baby spinach, grape and gorgonzola quiche

grape gorgonzola & spinach tart 2

Comfort food quiche for cold & grey fall days

The weather has been cold and grey lately, so I’ve been looking for something with some stronger flavors. Also, I really love baking things when it’s cold outside, because the oven warms up the whole apartment, it smells delicious and since I admittedly make a mess in the kitchen while cooking it’s good to have time to fix that 😛

Since I’ve been going around the countryside and seen amazing grapes I decided I should integrate them into a recipe. And what fits better to grapes than cheese (and walnuts)?

Fruity apricot & raspberry dumplings in roasted hazelnut coating

apricot-dumplings-1-7

Fruit, more fruit, soft dough and a nutty finish: a Bohemian-Austrian classic newly interpreted

Austrian’s love their cooked pastries and since a friend of mine brought me fresh apricots from his grandmother’s garden I thought I should give apricot dumplings a go. 🙂 Now, I’m not too much into doing everything the way it has always been done, so I added a little twist (it’s fantastic, trust me!).

Indian-style fish cakes with sweet & spicy tomato chutney

Fish cakes-1-3

Indian curry, sweet & spicy chutney and cooling yoghurt

This recipe has been on my mind for quite a while now, but you know how it is, life’s busy and somehow I never managed to sit down and poor it into a new blog entry. So I’m happy to finally be publishing another post 🙂

I really like this dish, because the flavors complement each other perfectly and the chutney is – also as a stand-alone – brilliant. You have Indian-inspired curried fish, soft potato, and this warming sweet & spicy tomato chutney with a hint of coriander that aligns well with the curry flavor. Carrot and peas give it a certain lightness and adding a dollop of fresh natural yoghurt  and some cooling cucumber on the side to balance everything beautifully.  Continue reading

Springtime ramson, spinach & curd cheese dumplings

ramson-spinach-curd cheese dumplings-1-6

Light, fresh & delicate spring dumplings

These dumplings are so delicate in flavor and soft in texture, it’s fantastic. They are the perfect incorporation of spring flavors for me. There is this hint of fresh lemon, basil and fragrant ramson. Brown butter and parmesan add just the right amount of warmth, comfort and substance. Last but not least, I boiled some cherry tomatoes to contrast ramson and spinach, which works very well :).

I’m going to (food) heaven green power pizza

I'm going to heaven green power pizza-1

So good you’ll start to glow while eating

When I was in the hospital in Durban and completely vitamin drained and disheartened from 3 weeks of hospital food my good friend Jackie’s brother and his wife popped in to bring me a super green vegan pizza – I think it was the best food I’ve ever tasted!

This is my take on that pizza, and although it’s not vegan, it’s pretty fantastic! It’s packed with vegetables, sprouts, hummus, avocado and makes you feel healthier, energized, happy and satisfied 🙂
It features a whole-grain base that resembles tarte flambée more than normal pizza dough, but that has the advantage that it doesn’t need proofing. The advantage is that it do Alfalafa sprouts, chickpeas, yoghurt and avocado provide you with good protein, plenty of vitamin Bs, monosaturated fatty acids and ample amounts of vitamins and minerals, so it’s a real brain-power booster 🙂 The wholegrain base and the hummus will also make sure that you feel repleted longer.

Alright guys, I’m hungry and keen on having on of these babies, so let’s get started! 🙂
