Soooooo I tried did a little experiment with this recipe. My intention was to create muffins without any butter or sugar and to replace these two by healthier, more nourishing ingredients. And for the dough, this wasn’t a problem at all, because I just used avocado instead of butter and dates instead of sugar. This recipe has been on my mind for quite a while now, but you know how it is, life’s busy and somehow I never managed to sit down and poor it into a new blog entry. So I’m happy to finally be publishing another post ๐Ÿ™‚

I really like this dish, because the flavors complement each other perfectly and the chutney is – alsoย as a stand-alone – brilliant. You have Indian-inspired curried fish, soft potato, and this warming sweet & spicy tomato chutney with a hint of coriander that aligns well with the curry flavor. Carrot and peas give it a certain lightness and adding a dollop of fresh natural yoghurt ย and some cooling cucumber on the side to balance everything beautifully.ย  Continue reading

Sunday morning brunch perfection

Close your eyes and imagine the sun shining in through the windows and your whole apartment or house is filled with the smell of fresh bread. Amazing, isn’t it? For me, this is the picture of Sunday morning. Add a good cup of coffee and we’re right at perfection.

This plait is heavenly, because it’s texture is so soft and fluffy, it’s fantastic. I added some lavender and lemon zest, which gives the plait and amazing delicate flavor. It’s perfect for a lazy Sunday morning brunch with family and friends.

Light, fresh & delicate spring dumplings

These dumplings are so delicate in flavor and soft in texture, it’s fantastic. They are the perfect incorporation of spring flavors for me.ย There is this hint of fresh lemon, basil and fragrant ramson. Brown butter and parmesan add just the right amount of warmth, comfort and substance. Last but not least, I boiled some cherry tomatoes to contrast ramson and spinach, which works very well :).
