I was standing in the supermarket in the meat section last Saturday and started to wonder what ever happened to the good old Sunday roast. “Time to give it a go”, I figured, and took a nice piece of pork neck home with me.ย Pork roast is an Austrian classic, traditionally served with sauerkraut and bread dumplings and not usually placed in the “healthy” section of a menu. I feel like I’ve been making plenty of sweets recently and was looking for something savory, yet easy and winter-like. She told me to make roast apples, but I thought it was another sweet dish. So jokingly she said: “Well, make savory roast apples then.” And, quite frankly, I thought the idea was brilliant.

This is another great recipe for all of you looking for a quick fix when you come home after work and just want something easy but healthy for dinner as this dish provides you with plenty of lean protein and a solid amount of vegetables. Best thing: suuuuper easy to make, you really can’t go wrong with it + it’s really delicious! The veggies and thyme give the whole dish a Mediterranean feeling, and that a hint of white wine just adds a little something to it.

Generally speaking, you could also use other kinds of vegetables, which make this dish perfect if you have leftover veggies you need to use up. Also, if you can’t get sea bass filets, don’t worry, any firm-fleshed fish is fine.

Quick & easy pesto salmon with asparagus, oven tomatoes and potatoes

A healthy summer meal that tastes delicious and will make you feel great

Summer (= bikini season) is coming so I’ve been thinking about some light and healthy dinner options that don’t take much time, taste delicious and make you (and me) feel great! I love eating things that are good for me, but it also has to be a treat for your taste buds ย (it turns out that I get somewhat passive-agressive when I have to endure longer periods of non-so-nice tasting foodโ€ฆ). Long story short, I came up with this delicious baked pesto salmon, it’s good for you and you should try it! ๐Ÿ™‚

I used some of my 5-minute ramson pesto, because I had some left, but any green pesto (basil, rocket etc.) works just fine.

The great thing is that you don’t need much kitchen ware, just place everything in an ovenproof dish and voilร . This is also a perfect one-person dinner, because it’s so easy to make. One word of caution though: make sure you take the salmon out of the oven after 15 minutes, it will be delicious and juicy. However, after 15 minutes it will start to dry out, so in this case less is definitely more!

If you are in a hurry there are a few items where you can save time: first of all, I usually make pesto myself, but if you don’t have time you could use store bought pesto instead. Secondly, I like to marinate the fish with the pesto for a while so the flavors go into the fish better, but you can also skip that step if you need to. Continue reading

A tropical delight for cold days

It’s been a while since Iast posted a recipe, but as for most of you as well, the time around Christmas was pretty busy. This is why I’m really happy to finally have found the time to share another dish with you!
This dish is really easy to make and brings Carribean feeling to you dinner table (or at least I believe it does!). The sweetness of the baked potatoe works really well with the lime flavored yoghurt and the coconut prawns; the curried zucchini give the whole dish more deepness and a little chilli kick, which is very nice.
Sweet potatoes is a real super food containing tons of nutrients, addย yoghurt, prawns and courgette and you have a very balanced and delicious meal.
