Incredibly fragrant, healthy and amazing

Guys, I’m super psyched about this recipe! It’s been on my mind for quite a while but I never managed to try it out until this week for a date night. To be honest, it’s even better than I had imagined. The marinated sake sashimi is amazing by itself, but combine it with crunchy veggies, creamy avocado and this incredible fruity mango dressing and it will lead you right into food heaven! The mango dressing is so delicious that I ended up eating some of it without anything else because it’s so delicious πŸ™‚ Needless to say, this is super healthy too, as you have your lean protein and ton of veggies. Perfect for a light lunch or dinner (may want to make a bit more in this case) or (as I did) serve as a starter.

There is not much that could possible go wrong here, just make sure you have enough time to marinate the salmon properly (i.e. at least 1.5 hours in the fridge).

Serves 4

Ingredients

For the marinated sashimi
400g sushi salmon, cut into 5mm slices
4 tbsp soy sauce
2 tbsp rice vinegar
zest of one lime
1 thumb-sized pice of ginger, peeled and finely chopped

For the salad
1 avocado, destoned, skin removed, cubed
100g baby spinach
1/2 cucumber, cubed
1 red bell pepper, deseeded, cubed
2 spring onions, finely sliced
2 handful watercress
2 tbsp black and white sesame seeds

For the mango dressing
1 mango, peeled and mashed
juice of 2 limes
a bunch of fresh coriander, chopped
one red chili, deseeded, finely chopped
salt, pepper

Method

1. In a small bowl, mix soy sauce, rice vinegar, lime zest and ginger. Add the salmon and place everything in a sandwich bag. Remove all the air so the bag sticks to the salmon and place in the fridge for 1.5 hours.

2. For the dressing, combine mango, lime juice, coriander, chili and season to taste with salt and pepper.

3. Place baby spinach, spring onion, avocado, cucumber and bell pepper in a bowl, add the mango dressing and stir until everything is covered. Top with the marinated salmon pouring the rest of the marinade over the salad, sprinkle with sesame seeds, some coriander leaves and watercress and voilΓ  πŸ™‚ It’s done!
