Refreshing summer cheesecake for days when it’s too hot to use your oven

My friend Hanna invited meΒ to her lake house last weekend for some swimming and BBQing.Β When I asked her what to bring her reply was just one word: “cheesecake”. Now the instructions were clear,Β but when it’s hot outside nobody wants to turn on the oven to bake a cake. The solution: go with this awesome and easy no bake cheesecake.

What is great is that the curd cheese is super light and refreshing, add some lime and it gets even better. The cookie base adds just the right amount of sweetness and then you have all these fresh berries (aka lots of vitamins, let’s not forget about the health benefits, guys πŸ˜‰ )Β on top – it’s awesome, really!

As of ingredients, you can use any kind of berries in your preferred composition, I just picked raspberries, strawberries, blackberries and blueberries, because I wanted to have a different colors and I really like these ones. However, red and black currants, gooseberries or cherries are fine, too.

It shouldn’t take longer to prepare the cake than around 20 minutes (+cooling time), so let’s get started, shall we? πŸ™‚

Zesty summer banana bread with lemon, chia seeds & almonds

Fresh lemon banana bread for hot summer days

I really love banana bread, but when it’s above 30Β°C outside the usual scrumptuous chocolaty cinnamony banana bread is not that appealing to me (perfect for cold fallΒ / winter days though, if you ask me). Therefore, I created this light, lemony banana bread for hot days which has more of a refreshing touch to it to make itΒ work for summer. Also, I cut down a bit on butter and added some chia seeds (alsoΒ for a nice crunch), so you can enjoy this with a good conscious. Last but not least, the almonds on top are just devine, totally worth baking around 5 banana breads to end up with this one πŸ˜‰

Just some general things: a) mix the dry and the wet ingredients at the latest moment and as quickly as possible, stir as little as possible and get the banana bread into the oven as soon as you can, and b) make sure theΒ butter isΒ at room temperature / soft, it’s really noΒ fun to try to beat the butter creamy when it’s too cold (I speak from experience… πŸ˜‰ )

If you are a lemon and poppy seed combo lover and are not too concerned with super foods, just replace the chia seeds with poppy seeds and you basically have a nice lemon-poppy seed loaf πŸ™‚ Let’s get started with this one, hope you like it!

A refreshing lunch for hot days

It’s ridiculously hot here in Vienna at the moment, so I was longing for something fresh and simple but still has some substance to it (I’ve been working out a lot recently and I’m basically constantly hungry + I love love love pasta!). This pasta salad is just that: Watermelon and mint are super refreshing, the slight sweetness of the watermelon contrasts the sourness of lime and feta, rocket adds a nice slightly bitter twang and bell peppers add a great crunch. You see, it’s a great combination!
