Great healthy breakfast for a good start of your day

This is a super easy, delicious and nutritious breakfast dish that only takes a few minutes to prepare and will leave you wanting more! Banana and pear will turn soft and sweet, there is a hint of freshness from the lemon zest, creamy peanut butter and a nice crunch from the toasted bread. Kids will love this, too, and because you can just put a whole batch of them in the oven at the same time it’s great for a family brunch or similar.

I actually came up with this dish because I really don’t like to throw away food and this is a perfect way to use up bread that has already dried out a bit, as heating the peanut butter will add quite a bit of moisture to the bread. If using fresh bread this whole moisture thing is a bit tricky, so make sure that your slice of bread is not too thin. Also, since the consistency of bananas is a bit softer than the one of pears it’s better to make the pear slices a bit thinner, the banana slices a bit thicker.

Regarding the amount of ingredients: depending on how big the slice of bread is the amounts will vary, but you should be fine with the amounts stated (I added a bit of leeway…).

Sweet mango chicken, crunchy veggies, creamy avocado and a hint of spice

I’ve been thinking a bit more about light & healthy summer dinner options, and this is one more dish I came up with. It’s brilliant, because you have fresh, zingy avocado cream, sweet and spicy mango, crispy chicken and crunchy veggies. Also, it’s a really healthy and delicious thing to make and will surly jazz up your day. I really love mixing sweet and savory flavors so this is a total win on my books. Just make sure to use ripe and soft mangoes. This is really important, because underripe mangoes are not sweet and juicy enough and therefore won’t give you this amazing thick sauce when frying.

Super easy fresh & creamy avocado dip with a hint of chili

It’s been a while since the last recipe, so I’m even more excited to come back with this super easy, delicious recipe! We had a lot of long weekends in Austria in the past weeks and I think I made the most of them travelling around Europe visiting friends, eating great food and enjoying life, sun, sea and the good weather – it was fantastic!

I came up with this dip a spart of another recipe (will be posted in the next couple of days), but it’s so delicious that I decided it should get a stand-alone blog entry.

Basically (as the title states), it is similar to guacamole, but also contains curd cheese, which results in a much creamier consistency and a nice freshness, which is also complemented by the lemon juice. And because oft he chili you have a nice spicy aftertaste (or a lot, depending on how much chili you put into the dip 😉 ). The single most important thing is just to use a really ripe avocado, so you can mash it easily with a fork.

For the health nuts among you (myself included), this dip is great, because you have all the healthy fatty acids from avocado and olive oil, but also a fair amount of protein due to the curd cheese. All in all, it’s a perfect combination!

What is great about this dip is that you can do so many different things with it: serve it with tortilla chips if you want a health dip to go with your nibbles, use it as a spread on some (toasted) bread as a snack, serve it with grilled meat or put it in a wrap, or – and I’ve been doing that because I like this dip so much – just eat it with a spoon.

Last but not least, it only takes 5 (very well spent) minutes to make this dip, it’s super easy, healthy and tastes great, you simply can’t go wrong with it. Bottom line: try it out!
