Viennese apple strudel for everyday

“An apple a day keeps the doctor away.”, is an old saying. “If the doctor is cute, forget the fruit!”, my little sister usually adds. But irrespective of what your sentiments towards your doctor’s looks are, you should really try this recipe! Basically, it tastes like the famous Austrian apple strudel (which is super awesome, of course), only takes 10 minutes to prepare and is filled with minerals and vitamins for a healthy start of your day. I really love this recipe, because I love apple strudel and this is a really easy way to get the flavor without baking or similar. 🙂

To add a nice crunch and a more nutty flavor, I like to make granola in a pan which can also be prepared in larger batches for the next time you crave apple strudel-style muesli or breakfast. If you’re in a hurry and don’t have time to make granola or you want to go for the healthy (and also very delicious) version, just use plain oats.

Serves 2

Ingredients

For the granola
80g rolled oats
2 tbsp sliced almonds
2 tbsp honey
a small knob of butter
a pinch of ground cinnamon

For the apple strudel muesli
1 large apple (preferably cooking apple or granny smith)
2 tbsp sliced almonds
2 tbsp ground hazelnuts
1 handfull raisins
1/2 tsp ground cinnamon
1/2 lemon zest
1 pinch ground clove

Method

1. Prepare the granola: Melt butter with honey and a pinch of cinnamon over medium heat in non-sticky frying pan. Add the oats and stir with a wooden spoon until all the oats are covered with the caramel mixture. Keep roasting the oats stirring frequently until they are dark and crunchy, which should take about 5 minutes. Take off the heat and leave to cool off, stirring frequently as the mix will get hard as it cools off.

2. In the meantime, quarter and core the apple and grate it coarsly.

3. Add grated apple, ground hazelnuts, raisins, ground cinnamon, ground clove and lemon zest to a bowl and mix thorougly.

4. Last but not least, stir in the granola and serve right away.
