Incredibly tasty, light, creamy and healthy
This is a great sandwich for a light lunch. What is great about this sandwich is not only the flavors, but also a lot of different textures. You have crispy, spicy chorizo, tender turkey breats, zingy and creamy guacamole – what else could you ask for?
What is most important is to use ripe avocados for the guacamole (otherwise, masking the avocados will be difficult and it won’t be as creamy and/or tasty). If you want to, just double the amount of ingredients of the guacamole and you can enjoy it another time with some tortilla chips or similar, which is great as well.
For the sandwich
200g turkey breast
10 5mm thick slices chorizo
2 mini baguette or ciabatta
2 tbsp sour cream
2 handful rocket
a few slices of tomato
For the guacamole
Juice of 1/2 lime
1/2 chili, deseeded and chopped
1 tbsp olive oil extra verging
1/2 clove of garlic, crushed
2 cherry tomatoes cut into small cubes
1 spring of fresh coriander, stalk removed, leaves sliced finely
1. Slice the turkey breast and season lightly with salt and pepper. Heat a pan and fry the turkey breast and the slices of chorizo until the turkey is cooked through and the chorizo is crispy.
2. While roasting the turkey, prepare the guacamole: halve your avocados, discard the stone, put the flesh into a mixing bowl and mash with a fork until you have a nice avocado paste (some chunks of avocado will be left). Add the lime juice, chili, olive oil, garlic, coriander, cherry tomatoes and mix thoroughly. Season to taste with salt and pepper.
3. Cut the mini baguettes horizontally and toast until nice and crispy.
4. Spread two tablespoons of guacamole on the one bottom half of the baguette and two tablespoons of sour cream on the other half. Place the slices of tomato on top of the guacamole, add the turkey and the crispy chorizo, top with the rocket and put the top half of baguette on top.
Voilà, you have very tasty lunch sandwiches!
